Combine Rice DREAM™ Horchata and coconut milk in medium container. Whisk in chia seeds and vanilla. Whisk for 1-2 minutes or until mixture begins to thicken.
Divide chia pudding evenly between two small glasses, jars or containers. Chill for at least 3 hours or overnight.
When ready to serve, combine frozen mango and 1/2 cup Rice DREAM™ Horchata in a high speed blender and blend for 1-2 minutes or until mixture is completely smooth.
Pour mango topping on top of chilled chia pudding.
Top each pudding with diced pineapple, toasted coconut and chopped macadamia nuts or other desired toppings. Finish with a sprinkle of cinnamon. Makes 2 servings.
