In a medium bowl, whisk together almond milk, maple syrup, and vanilla.
Whisk in chia seeds. Let sit for 5 minutes, then whisk again, making sure chia seeds are evenly distributed.
Cover and chill overnight.
To serve, divide into three bowls or small glasses. Top with fresh fruit, nuts, peanut butter, granola, or any of your favorite toppings. Makes 3 servings.
